Mushrooms in the hole?

one of my friends would have a student cookbook had a recipe for a vegetarian toad in the hole with mushrooms rather large sausages. Does anyone know where I can find a recipe like this? thanks!

You can use this recipe and substitute sausage mushrooms. Ingredients * 125 g flour * 2 large free range eggs * 300 ml skimmed milk * 2tsp thyme leaves, chopped, plus extra for dusting * 2 small red onions 2 tablespoons sunflower oil * 8 Vegetarian Sausages Method 1 Preheat oven to 230C / 210C Fan / Gas 8. Sift the flour into a bowl and season well with salt and pepper. Add eggs and some milk, and whisk to make a thick paste. Gradually whisk in remaining milk. Add the thyme. 2 Cut each onion into 8 wedges. Place oil in a small roasting tin and heat in oven for 5 minutes. Place sausage and onion in the tin, distributing evenly, and cook for 8 minutes. 3 Pour over the pasta and return to oven for 20-25 minutes until risen and golden. Serve sprinkled with extra thyme.
