Anyone have a vegetarian soup recipe winter time with Swiss chard and beans and stewed tomatoes?
It also had the cooking sherry in it. I lost the recipe.Thanks.
VEGAN WINTER SOUP INGREDIENTS 3 cups cooked or canned chickpeas 2 cloves garlic, peeled and chopped 3 stalks celery, chopped 3 carrots , peeled and chopped 1 large red onion, peeled and chopped 2 tablespoons olive oil 2 bunches of spinach, cleaned 1 / 2 head Napa or Savoy cabbage 1 / 4 cup parsley Italian chopped 2 sprigs fresh rosemary, (leave the stem) A 14 1/2-ounce can plum tomatoes, drained 6 cups boiling water or vegetable broth 5 oz stale bread, as semolina or baguette, sliced (about 3 / 4 stick), salt and pepper 1. In a large saucepan over medium-low heat, saute the garlic, celery, carrots and onion in olive oil for about 20 minutes, stirring often so the vegetables do not brown. 2. Cut the hard-core triangular spinach leaves and cut into 1/2-inch slices. Add to vegetables in the pan. Tear the Swiss chard leaves and set aside. 3. Cut the triangular nucleus of the head 1 / 2 cabbage, then discard. Place cabbage, flat side down, on a cutting board. With a large chef's knife, slice the cabbage close intervals, forming long strips and ribbonlike. Set aside the leaves of spinach. 4. Add the parsley, rosemary sprigs and tomatoes to skillet and simmer for at least 15 minutes. Add the cabbage and Swiss chard leaves, half of the chickpeas, and enough boiling water or broth to cover. Simmer for 20 minutes. 5. Puree remaining chickpeas in a food processor and add to soup with enough boiling water or actions to maintain the liquid in the soup. Remove rosemary sprigs and add slices of bread. Add more liquid if necessary, but keep in mind that the soup must have a very thick "stew as" coherence. Season with salt and pepper to taste. Makes 8 servings. This can not be him, but it sure is delicious!
