Vegetarian tagine or baking recipes?
Hello, I have a tajine (Moroccan cooking and baking pot) and I like to try make some vegetarian meals or some bread with it. Can anyone help with a recipe?
Plant 50mins Tagine Serves 4 Hot Vegetarian Vegan without egg tagine Vegetables Main Course Gluten Wheat free milk without eggs Ingredients 1 tablespoon olive oil 1 onion, sliced 3 carrots, cut into 2.5 cm / 1 pieces inch 2 turnips, quartered 450g/1lb Potatoes New 240ml/8fl.oz. Vegetable stock 2 tablespoons freshly chopped parsley 1 tablespoon chopped fresh cilantro 90ml/3fl.oz. Water 1 teasp paprika 1 tablespoon lemon juice zest of 1 / 2 lemon 200g/7oz green olives, rinsed and drained Salt and Black Pepper Instructions 1. Heat oil in a large pot over medium heat until hot. Add onions and cook 5 minutes, stirring occasionally until browned. 2. Add carrots, turnips, potatoes and stock, bring to a boil, reduce heat, cover and cook, stirring occasionally, for 15 minutes until the turnips are very tender. 3. Meanwhile, Place the parsley, cilantro, lemon juice, paprika and water in a blender or food processor and process until fairly smooth. 4. Add the herb mixture to vegetables in skillet, along with all the lemon zest and olives. Cover and cook 20 more minutes until vegetables are tender, stirring occasionally. 5. Season with salt and pepper. Serve over hot cooked rice or couscous. ****************************************** ********** 75mins Lentil Tagine Serves 6-8 Hot Vegetarian Vegan Pulses Vegetables Tajine Main Course wheat gluten, egg-free Dairy Ingredients 450g/1lb Lentils 1.1L/40fl.oz. Fresh vegetable stock 4 cloves garlic, crushed 675g/1-1/2lb sweet potatoes, peeled and cubed 325g/12oz chopped tomatoes 550g/1-1/4lb capsicum (peppers) 325g/12oz minced onion and seeded, chopped 1 tablespoon grated fresh ginger 1 teasp Cayenne Pepper 1 level teasp Salt freshly ground cumin cilantro for garnish Directions 1. Place lentils, stock and garlic in a large pot, bring to boil stirring, reduce heat cover and simmer for 20 minutes. 2. Add the potatoes, tomatoes, peppers, onions, ginger, cumin, pepper and salt. Bring back to boil and cook, uncovered, for 30 minutes or until sweet potato is soft. 3. To serve – garnish with chopped cilantro and serve with rice or couscous i hope this helps!
