The pizza is a universal food. Most of us grew up with it. We all have an opinion about it.

If you are from New York, is the pizza of New York. If you are from Chicago, is Chicago Deep Dish. West Coast fans have their own traditional Italian pizza and New Wave.

Of course, if you're New Haven, Connecticut, spend hours debating who makes the best apizza: Is Sally's or Pepe? Then there are those who favor Modern Apizza. New Haven fans are fanatics.

Woven through the U.S. are small pockets of regional favorites. For example, on Long Island, New York, is a guy called Grandma's. If you are a certain area in Pennsylvania, you favor Old Forge.

There are several types of pizza for every taste different: it is thin crust of Naples, and is not thick crust Sciliar. Chicago deep dish is a difference of one another. California Pizza can be thin with unusual ingredients for unique flavors.

The people do not discuss about steakhouses or hamburgers or Chinese food, but food strikes a chord. It's a magical little disk that makes things happen. Whether you're in Pennsylvania or Wisconsin, his own region makes the best pizza in the world. It tends to favor what I grew up.

There is also the master pizzaiolo that defy any region and do my best, putting his heart and soul into every one of them produced.

Here is a short list of smaller portions, which make their own way. Not for fame or glory, but because they are dedicated to the craft of creating incredible pizza.

Pizzaiolo Chris Bianco (Pizzeria Bianco, Phoenix, Arizona) is considered by some the pizzaiolo Ed LaDou Finast in the U.S., is another master of the highly acclaimed pizza. He created Wolfgang Pucks and California Pizza menu Kitchen. Now in Caiote endorses Pizza Café. Tony Gemignani (8 times world champion and co-owner of Pyzano) and Brian Spangler (Apizza Scholls, Portland, Oregon), each to continue the tradition of passion and strive for perfection. Gary Bimonte, grandson of Frank Pepe continues the legacy of his grandfather Pepe's in New Haven, Connecticut.

Another legend is Peter Reinhart, author, baker and smaller portions. Peter told me once, not just two types of pizza: good pizza and great pizza.

Peter was on a quest to find the best in the United States. His book, American Pie, chronicles their adventures of the pizza.
