Does anyone have any good vegetarian recipes that are simple?
I recently quit eating meat. I became a lacto-ovo-vegetarian, who still eats eggs and dairy products. I really need some good recipes I could try. Help me out!
I'm ovo-lacto-which recently converted to vegetarianism. I am loving it! Here are a couple of the best and easiest recipes I've found so far … Spinach and Feta Pasta (super simple) 1 package penne pasta olive oil 1 / 2 cup chopped onion 2 cloves garlic 3 tomatoes, chopped 1 c mushroom C 2 C fresh spinach salt and pepper to taste 1 pinch ground red pepper 1 package 4 oz feta cheese, cook pasta until al dente. Meanwhile, heat 1 tablespoon olive oil in large skillet over med high heat. Add onion and garlic. Cook 5 minutes. Mix in tomatoes, mushrooms and spinach. Season with salt, pepper and chili. Cook 2 minutes until spinach is wilted. Reduce heat to medium and add feta cheese and pasta. Cook a couple of minutes until heated through. This is my own creation: the sweet potato and Black Bean Enchiladas 10 corn tortillas 1 14 oz black beans CAN 1 14 oz can sweet potatoes 1 yellow onion 2 jalepeno, seeded and diced 2 cloves garlic, minced 1 teaspoon cumin, chile powder, cilantro and black pepper 1 carrot grated 1 can green enchilada sauce or mild sauce 1 1 / 2 c jack cheese mashed sweet potatoes in large bowl with a fork or potato masher. Add 1 / 2 c cheese, spices, jalepeno, carrot, and beans. Saute onion and garlic for 5 minutes and add to potato mixture. Mix all ingredients. Put some sauce on the bottom of a dish of 9×13. "Nuke the corn tortillas for 10 seconds each in the microwave so that will not break. Make some sweet potato mixture on each tortilla and side seam in the instead of plate. Pour the remaining sauce and cheese on top and bake in a preheated oven at 375 degrees for 30 minutes. YUM! I hope I have helped. ENJOY!
