My husband is a vegetarian who hates vegetables. Are there any good cookbooks or recipes? ?

He's going to eat tofu and eggplant and such. Just Vegetables not straight. I'm dying for a little variety, plus pizza and ravioli. I can not seem to find recipes for "normal" food. Most just seem gourmet and foreign. Help!

I feel much better vegetarian chopped up rather than natural whole form. I have a helicopter and cutting vegetables and then my steam and season them. I added salt, pepper, various Italian seasonings and hot pepper. Then I started to add the pizza sauce I had in the fridge. Stir it often and should not stick. Then take and transfer to pan. Rolls, sub rolls, or even dinner rolls are perfect. I hope that helps.
