Does anyone know any vegetarian recipes for Passover?

I became a vegetarian about a year ago and am just realizing now how hard it will be Easter this year! I eat lots of rice, beans, etc., and since they are prohibited during Passover, I'm not sure what to eat …. more meat recipes have the main thing.

Pick up some Latke (mixture of kosher l'Pesach) and some matzah, and make a little salad of Israel using this recipe: http://www.recipezaar.com/135390 (or any other recipe, actually lol) You can make very good sandwiches for wetting the matzah, placing it Latke salad and then have Israel in the "sandwich" thus. It is very good. Eat plenty of fruits and vegetables, salads, fries, sandwiches. Matzah and cream cheese is very good, too.
