What can I teach my roommate to vegetarian cooking? It must be simple and easy healthy is not really a concern?
VEGETARIAN POTATO AND Leek Soup 4 to 5 Yukon potatoes 2 leeks organic whole 4 cups vegetable stock 1 teaspoon freshly ground nutmeg, chopped chives (for garnish) salt and pepper to taste cube potatoes and boil them in the population. When potatoes are almost finished, finely chop the leeks and sauté them a small amount olive oil until they soften and are sweet. Add the leeks to the potatoes. Cook for a few more minutes until potatoes are tender. Add the nutmeg, Puree mixture in blender all. Serve garnished with chives and a drizzle of olive oil.
