Authentic Mexican recipes vegetarian?
So you looked around to find authentic recipes, but they all have some chicken or other meat. Can anyone suggest some easy recipes that are vegetarian authentic Mexican? (PLEASE do not TexMex because that's all I could find.)
Mexican Vegetarian Casserole: 25 min 10 min 4 servings Preparation 1 (340g) package of ground beef vegetarian, Mexican 1 teaspoon vegetable oil 1 onion , chopped 1 cup sliced mushrooms 3 cloves garlic, finely chopped 1 cup carrots, shredded 2 tomatoes, chopped 1 cup peas, sugar snap, ends removed and sliced 1 teaspoon in the diagonal peak de gallo, spice (optional) 1 cup salsa Heat oil in large skillet, turn heat to medium add mushrooms onion and garlic and saute until golden brown. Add the carrots, cook for 3 minutes. Add tomatoes, stir. Add peas, stir cook for another minute. Crumble the soil around vegetables in the pan, mix well. Cover and let the heat through the lower med heat, stir a couple of times (aprx 10 minutes). Serve with pasta or cooked rice. Divide sauce over each serving plate or serve on the side.
