
Easy vegan recipes vegetable dishes in the St. Patrick's Day
St. Patrick's Day is just around the corner, why not adopt a healthy approach to serving these easy vegan recipes for vegetable dishes. Celebrating the holidays is fun and because there will be a lot of green beer to enjoy be sure to include some healthy fresh food for your event.
It's easy and cool to offer shot glasses full of celery soup asparagus. Asparagus soup is one of the many easy vegan recipes you can make the night before and after work, just take the soup out of the refrigerator, fill your shot glasses and serve on the St. Patrick's Day.
What about olive tapenade on sourdough baguette? For the holiday St. Patrick's Day this decrease can be made several days in advance and again, just out of the refrigerator before serving your guests and well finished and the loaf of bread or one of its vegetable side dishes. Other dishes of vegetables to your friends to enjoy in St. Patrick's Day is a cucumber salad with balsamic vinaigrette, Waldorf salad, fennel and mint salad or cucumber and seaweed salad.
Of course, keeping real vegan and do not forget edaname a bowl of hot or cold either with or without salt. Recipe for roasted asparagus soup
2 1 / 2 lbs. thin asparagus, trimmed and cut in two "pieces
Two leaks, green parts only white light, clean and finely chopped
2 tablespoons olive oil
salt and pepper to taste
2 1 / 2 cup vegetable broth
Chives for garnish
Preheat oven to 425 degrees F. In a heavy roasting pan, combine the asparagus, leeks, olive oil, slat and pepper. Mix to combine.
Roast, stirring occasionally, for 30 to 35 minutes or until leeks are golden brown and asparagus are tender.
Transfer vegetables to a blender and add the broth. Process until completely pureed, taste to adjust seasonings.
Pour soup into shot glasses and garnish with chives, if desired.
Waldorf Salad Recipe
4.3 The Granny Smith apples
2 stalks celery, thinly sliced
4 oz of nuts or walnuts chopped
Mixed greens, if desired
vinaigrette dressing
Cut a few slices of apple with the skin for decoration and then peel and the rest of the apple core and cut into thin strips. Mix apple slices in lemon juice to prevent apples from turning brown.
Add chopped celery, apple slices, walnuts and mixed greens and toss with French dressing.
French Vinaigrette Recipe
2 Tbsp. Dijon mustard
2 tablespoons champagne vinegar
6 tbsp. extra virgin olive oil
Salt and freshly ground pepper to taste
Mix ingredients in a vial and serve with salad.
