Fruity Couscous Ingredients Salad 1 1 / 3 cups dry couscous 2 / 3 cup sliced almonds 1 / 2 cup dried apricots, chopped 2 / 3 cup Craisins (sweetened, cranberries dry) or raisins, microwave in 1 cup water for 1 minute 1 teaspoon cumin 3 scallions, thinly sliced vegetables 1 pinch salt and freshly ground black pepper, to taste Directions Prepare the couscous according to package directions. Combine all ingredients, mix. Serve at room temperature or chilled. Couscous w / Mushrooms and INGREDIENTS sun-dried tomatoes 1 cup dehydrated sun-dried tomatoes 1 1 / 2 cups water 1 / 2 (10 ounces) couscous 1 teaspoon olive oil 3 cloves garlic, crushed 1 bunch scallions, chopped 1 / 3 cup fresh basil leaves 1 / 4 cup chopped fresh cilantro 1 / 2 lemon, juiced salt and pepper 4 oz mushroom caps Portobello, sliced DIRECTIONS Place the sundried tomatoes in a bowl with 1 cup water.
