I have to make a vegetarian meal?

I have to make a last minute vegetarian food tonight …. all I have is pasta, frozen vegetables, pepper, tomato, tomato paste, rice, some cheese, potatoes, garlic …. There is something I can remember with these ingredients

You have the ingredients a delicious Mexican rice or Mexican rice casserole. This is what I would do … Put 2 cups of uncooked rice in a skillet with a little olive oil and cook for a couple of minutes medium heat. Add a little chopped garlic and cook for another minute. Mix about 1 / 4 cup tomato paste with a couple of tablespoons of water to a little thin (but not as fine as usual tomato sauce.) Add the rice and cook for a minute. It was crackling.
