Can you tell me some quick and easy vegetarian recipes?

Sauté onion and tomato sandwiches. Ingredients: 2 medium onions, sliced 1 teaspoon olive oil 8 slices whole grain or rye bread abundant (toasted, if desired), sweet mustard 3 small red or yellow tomatoes, 4 thinly sliced lettuce leaves, small strips of fresh basil leaves 4 ounces Brie cheese spread or tub-style cream cheese Directions In a large skillet cook the onion in hot oil over medium-high heat 5 to 7 minutes or until onions are soft and just starting to brown, stirring frequently. Remove from heat, cool slightly. To assemble, lightly spread one side of 4 slices of bread with honey mustard. Top with onion slices, tomato slices, shredded lettuce and basil. A statement next to the remaining 4 slices of bread with Brie cheese. Place the bread slices, cheese side down, on top of sandwiches.
