Anyone have any interesting / unique low-carb recipes?

I low-carb recipes that are different and delicious. I do not like meat beef, chicken or pork though … for vegetarians or those who use eggs or dairy products, cheese would be best! Thank you.

It occurred to me maki sushi rice unused. I did it for people who were doing low-carb as well as "normal" and both groups loved it. :) Ingredients: Algae Daikon Carrot Zuchinni nori wrappers (the bak) Cauliflower mirin toasted sesame oil sesame seeds stuffed with your choice (smoked salmon, tuna, shrimp, crab, avocado, sliced marinated mushrooms Shiitaki, etc.) Method: Grate the carrots, zuchinni, and daikon, but keep them separate. Sprinkle a little sesame oil, mirin and sesame seeds in each dish and stir until vegetables are coated. Set aside. Boil cauliflower until very, very tender. Drain. Puree. Set aside. Prepare the filling of your choice. I avocados, mushrooms Shiitaki (which I marinated in some teriyaki sauce) shrimp, crab and salmon for sushi I did. Now the fun part! Place a sheet of nori on bamboo sushi roll mat or a piece of plastic wrap. Place or grated carrot, zuchinni, daikon, or pureed cauliflower in about half of the nori. Then put in the filling of your choice. Once filled, rolled in a tube, seal edges with a little water and then cut into 6 slices. These are the combos to use: shredded carrots w / marinated mushrooms and grated carrot zuchinni Shiitaki w / w mashed cauliflower crab and avocado / salmon (I wasabi mixed with cauliflower puree for extra flavor) Carrot Daikon w / Zuchinni shrimp, avocado and crab mashed cauliflower w / mushrooms and grated carrot Shiitaki Experiment and have fun.
