What is a good a good vegetarian Italian [s]?
I love Italian food. But I'm vegetarian now. What is so good?
I've been a vegetarian for over five years and have been doing this since the beginning. I usually take the summer squash and zuccini and saute in oil with garlic and olive oil until very soft then add the vegetable broth, tomatoes, fresh / dried basil, and s & P This kitchen for about 5-10 minutes until the tomatoes are soft but still whole. Toss with penne and sprinkle with Parmesan cheese (the good stuff!). Can vegetable exchange for nothing really. I in generally maintain a good supply of vegetables in the freezer to fill in broccoli and peas are a good option too. Sometimes I fry bread slices of tofu and put that on top of tomato sauce and spaghetti. add a couple tablespoons of ricotta pasta sauce smooth and gives a good change from time to time too.
