Help me make a healthy, vegetarian version of chicken and Broccoli.?
I have a recipe my mother used to do when we were kids (before that I was a vegetarian) that I would try to make a vegetarian dish that is also a bit healthier. Here is the original recipe: 1 bag broccoli florets 4 boneless chicken breasts, cooked and cubed (* I use for this chicken seitan, I think) 1 can cream of chicken soup 1 can cream May 1 cup celery (veganaise I could use) 1 teaspoon lemon juice 1 cup shredded cheddar So – ideas? There has to be vegan. I've never done a "chicken" Chicken casserole alternatives before using, so it was curious to hear the information from anyone who has. Thanks for the input!
