* 2 26-ounce jars of organic pasta sauce
* 1 package of 8 oz lasagna noodles whole wheat
* 3 tablespoons Olive Oil
* 2 cloves garlic, minced
* 1 large eggplant, cut into pieces
* 2 zucchini, thinly sliced
* 1 cup sliced mushrooms
* 3 tablespoons chopped oregano
* 1 12 oz tub of low fat cottage cheese
* 1 package 8 oz mozzarella cheese, grated low-fat

Preheat oven to 375 degrees. In a large skillet, Pour the olive oil and allow to warm. Next, place the garlic to saute a little. After the sputtering pretty good, you want to add your eggplant, zucchini and mushrooms.
Bring a pot of boiling water, and place of lasagna noodles in it. Let simmer until noodles are almost done. This will take about 30 minutes.
Continue to saute until vegetables are almost completely done. Then you layer your lasagna noodles, mixing vegetables, pasta sauce and cheese in a large baking sheet.
When all ingredients have been used, ending with the last layer of cheese and sprinkle on the oregano. Instead of using salt for healthy recipes for dinner, find a great condiment to add flavor without the consequences. Enjoy!
