Can anyone recommend some good vegetarian cookbooks?

Does anyone have any reccomendations for good vegetarian cookbooks? I'm in looking for recipes that are not truly "deluxe" or "gourmet" … I'm learning to cook, so I would start out more easy ones first! If you have a favorite vegetarian cookbook, please let me know. (:

I learned to cook some wonderful dishes healthier and tastier in a book called "The Vegetarian Epicure" by Anna Thomas. I remember the cauliflower curry is particularly good, and I think she also has a good recipe for Parmesan eggplant, and some of the desserts well. I received this book as a college student, so the recipes are neither particularly difficult nor expensive. I am including a link to your website if you are interested. Bon appétit.
